Violations/Inspector comments: 1. When the ice maker (big cube) door was opened, I observed a plastic door hinge guard to have fallen into the ice bin along with flecks of plastic spread throughout on the ice. PIC immediately contacted maintenance personnel. Maintenance arrived and shut off the machine for ice removal, repair, and bin cleaning. 2. Cooking equipment not being cleaned every 24 hrs. Observed a very thick accumulation of food residue and carbon build-up on grate of the gas grill, in the 'Entree' service area. Showed PIC what needs addressed and discussed a more frequent routine cleaning habit. PIC instructed an employee to initiate cleaning during the inspection. 3. Exterior door hinge and surrounding areas of the double convection oven, in baking area, observed to have accumulated carbon and food debris. Showed PIC what needs cleaned.

Observed a yellow Taylor brand digital thermometer stored atop the prep table, next to convection ovens, soiled with food residue; not cleaned after last use during breakfast service. PIC cleaned the thermometer after discovery.

Violations/Inspector comments: 1. Plumbing system not maintained in good repair - observed a very thick accumulation of grease and debris surrounding the grease-trap area, under the Little Caesar's three-compartment sink. A repeat violation from 10/24/19 routine and 10/28/19 follow-up inspections. A timeline for service still unable to be provided at the time of this inspection. Service and clean immediately. 2. Food storage shelving rack, immediately to the left of the Little Caesars walk-in cooler, in need of cleaning to remove the accumulated food scraps, static dust, and now formed mildew/mold on all racks. A repeat violation from 10/24/19 routine and 10/28/19 follow-up inspections. Clean immediately. 3. Wall-mounted shelving, above the Little Caesar bread-stick prep area, in need of a detailed cleaning, to remove the accumulated food debris, oil, and salt. A repeat violation from 10/24/19 routine and 10/28/19 follow-up inspections. 4. The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
